     Aglione is the traditional garlic of Tuscany and its roots can be traced back to the Etruscans. Its cultivation had slowly declined until only family traditions kept it from extinction.  This much sought after variety has thankfully experienced a resurgence in cultivation and popularity in the last decade but remains virtually unknown in the United States.

     Aglione is often referred to as “Aglio del bacio” (Lover’s garlic or Kissing garlic). Being in the wild leek family, it lacks the alliin (allicin) that make garlic pungent. This garlic is mild, odorless, and easily digestible.
